Steak and Soba Stir-Fry

We like skirt steak because it’s a tasty and affordable cut. Slice it thinly so it’s tender.

Ingredients

Makes 4 servings
2 tablespoons sliced almonds
8 ounces soba (Japanese-style noodles) or spaghettini
Kosher salt
1 teaspoon plus 3 tablespoons vegetable oil
12 ounces skirt or flank steak
Freshly ground black pepper
2 scallions, whites and greens separated, chopped
4 medium garlic cloves, chopped
1 tablespoon grated peeled ginger
2 heads baby bok choy, quartered
1 medium carrot, peeled, thinly sliced on a diagonal
3 tablespoons oyster sauce
3 tablespoons reduced-sodium soy sauce
3 tablespoons unseasoned rice vinegar
1 tablespoon toasted sesame oil

Step 1:
Start by preheating your oven to 350°F. Take a small rimmed baking sheet and spread the almonds evenly on it. Toast the almonds, tossing them occasionally, until they turn a beautiful golden brown, which should take approximately 8-10 minutes. Afterward, place them aside to cool.

Step 2:
In a large pot of boiling salted water, cook the noodles until they reach the perfect al dente texture. Stir occasionally to ensure even cooking. Once cooked to your liking, drain the noodles and give them a rinse to cool them down. Set them aside for now.

Step 3:
Take a large skillet and heat 1 teaspoon of vegetable oil over medium-high heat. Season the steak with salt and pepper, then cook it until you get those desirable charred spots. Cooking for about 4 minutes per side should give you a tender, medium-rare result. Allow the steak to rest for 10 minutes, and then proceed to thinly slice it against the grain.

Step 4:
While the steak is resting, wipe out the skillet and add 3 tablespoons of vegetable oil, heating it over medium heat. Throw in the scallion whites, garlic, and ginger, and give them a good stir until they become softened, which should take around 1 minute. Now add the bok choy and carrot, cooking them and tossing occasionally until they become crisp-tender, roughly 4 minutes.

Step 5:
Time to prepare the delicious stir-fry sauce! Whisk together oyster sauce, soy sauce, vinegar, sesame oil, and 1/2 cup of water in a small bowl. Now add this flavorful sauce to the vegetables in the skillet and bring everything to a gentle simmer. Next, fold in the scallion greens and the reserved almonds and noodles. Now your mouthwatering noodle stir-fry is ready to be served alongside the succulent steak.
